Who doesn't like to enjoy some cold and refreshing iced tea in the middle of summer. Make it even better by turning your homemade iced tea into healthy popsicles. Sweetened naturally with honey and infused with real ginger and lemon - these homemade popsicles are the perfect summer treat.

Heat the water in a small saucepan and bring it to a boil.
When the water has boiled turn off the stove and add your tea bags or loose tea, along with the ginger. I like to give my ginger a few stomps with the other end of a wooden spoon to release the flavour.
Stir in the honey - you don't want to heat the honey over the stove as this can kill off some of the beneficial compounds.
Let the pot of steeping tea, with honey and ginger steep for about 30 minutes. The longer you leave it the more intense the flavours will be.
Strain the mixture and discard the tea bags (or loose tea) and ginger. Zest the lemon, and add the zest along with the juice of the lemon to the strained tea mixture.
Pour the mixture into 8 popsicle moulds and freeze for at least 4 hours. If you don't have popsicle containers you can use ice cube trays.
