About The Conscious Dietitian

Prayer Wheels, Katmandu, Nepal

Welcome!

What if healthy eating and caring for the environment were not treated as two separate entities?

My name is Rachel Dickens and I love food. I am a Registered Dietitian with the College of Dietitians of British Columbia and currently work in Victoria, B.C. as a Renal Dietitian with Vancouver Island Health Authority. I have previously worked as an Accredited Practising Dietitian in NSW, Australia and I secretly love vegemite.

I have created this blog as a guide on how to follow a healthy, seasonal diet while still being considerate of the environment. Eating sustainably doesn’t mean missing out on your favourite foods or having to spend a lot of money. What it does mean is questioning where that protein on your plate came from, knowing when ‘fair trade’ products are worth the extra $$ and thinking twice about how far your food had to travel to reach your plate.

It makes sense that eating fresh, seasonal produce promotes better health and it also makes sense that it will promote a healthier planet. By avoiding monoculture crops, GMO products, factory farmed meat, unsustainable fishing methods and excess packaging waste we can all work together to preserve the planet we share with 6 billion other people.

I hope to give some insight into sustainable products and to help you and myself become more conscious of the way we eat and live. I will share some of my favourite vegetarian recipes that use fresh, seasonal produce with limited packaged ingredients. I will also source up to date information on the most sustainable products and practices. Take a look around. I hope you enjoy!
