Tahini Coconut No-Bake Energy Balls |GF

By 5 Comments

The combination of tahini and honey is one of my all-time favourites. Add a little toasted coconut into the mix and you have yourself a gourmet treat! I love making a big batch of these no-bake energy balls, to have on hand for when I need a healthy snack. They taste great frozen as well!

No-Bake Tahini Balls in Blue Bowl

With so many energy ball recipes available on the internet, what makes these Tahini Coconut No-Bake Energy Balls different? Tahini is made from roasted sesame seeds, and that’s exactly what it tastes like – some would describe the flavour as nutty or earthy. When tahini is married with honey, it offers an amazing combination – and this healthy snack is so delicious could be mistaken for a dessert. This no-bake energy ball recipe is comparable to my 100 Calorie Peanut Butter Energy Balls which are one of the most popular recipes on my blog….

Raw Chocolate Date Bars | Vegan GF

By 1 Comment

I am all about the minimal ingredient recipes. I love that these raw chocolate date bars can be made with as little as 4 ingredients, and they are naturally refined-sugar free, gluten-free and vegan. A simple healthy dessert recipe that can be made in batches, and frozen for later – when you need that sweet treat.

Raw Date Bars Cut Into Squares On Baking Paper

The best thing about making raw desserts is that they are naturally free of refined flour and refined sugar. Most of the time they are sweetened with dates, which are not only a great natural sweetener, they are also packed full of fibre and potassium. Here is my recipe for a Raw Chocolate Date Bars which rivals my other favourite raw chocolate date bar recipe, this favourite Raw Chocolate Brownie with Caramel Icing.

Seedy Peanut Butter Oatmeal Cookies | Flour-Free

By 3 Comments

These super seedy peanut butter oatmeal cookies and made with just that – seeds, peanut butter and oats. I love these cookies because they are sweetened naturally with honey and are flour-free. These cookies make the perfect power snack, night-time sweet-treat, or even a delicious breakfast cookie!

Close up of seed cookies on a baking tray

These cookies have been a success in our cooking groups – even more than my old favourite Three Ingredient Peanut Butter Cookies. The combination of peanut butter and honey is always a winner, but I think what sets these cookies apart is the perfect amount of crunch from the trio of seeds – sesame, sunflower seeds and pumpkin seeds (pepitas). They are a great after-dinner treat, healthy snack on the run, and I could even be convinced that these could stretch to be a breakfast cookie!

3 Ingredient Banana Pancakes

These 3 Ingredient Banana Pancakes are seriously the BEST and tastes so delicious that nobody will notice they are flour-free. I love making these banana egg oat pancakes for breakfast or having them a healthy snack. Try them smothered in peanut butter for a high protein power breakfast.

3 ingredient banana pancake on white plate

These simple 3 Ingredient Banana Pancakes are not only a new staple in our house, but they are also a go-to for my cooking groups at work. Everyone loves three-ingredient recipes (like these Three Ingredient Peanut Butter Cookies) because sometimes we just don’t have time to mess around with finicky recipes. Another thing I love about this recipe is that it makes a great base for creativity. Try adding raw cacao with spinach, or frozen blueberries and chia. I know you will love these 3 ingredient banana pancakes as much as we do!

Two Ingredient Corn Patties – [Indigenous Inspired]

By 1 Comment

This recipe for Corn Patties was created as an alternative for white bread for a healthy eating and diabetes prevention group. We all respect and value what eating traditional Indigenous foods can bring to the community in terms of cultural wellness and overall health. This recipe is only 2 ingredients and is so simple to make. It tastes great with pesto, eggs, or even smoked salmon!

Stacked Corn Patties

When we think of traditional Indigenous foods, here on the West Coast our mind automatically goes to salmon, seafood and berries. Corn was first harvested in Canada by the First Nations between Manitoba and Lake Superior and was a diet staple along with wild rice and hunted game. There was even a type of bannock made from corn (along with roots and sap), and it was only around the 1860s when bannock made from white flour was introduced. In my quest for flour-free alternatives to bread, this recipe for 2 Ingredient Corn Patties was created! And the best part – it is SO easy!

Stacked Soft Pumpkin Cookies with Chocolate Chips Sprinkled

Working in a busy Diabetes Education Centre, I am always looking for new and exciting ways to get people excited about ‘healthy desserts’. That’s why I’ve created these totally delicious low-carb healthy soft pumpkin cookies, and they are also vegan, paleo and gluten-free!

So Simple Pumpkin Spiced Latte Recipe

By 3 Comments

This simple pumpkin spiced latte recipe will get you excited to get out of bed in the morning, and it is a great low-sugar alternative to what’s available in coffee shops. It is dairy-free, gluten-free, and packed full of nutrition. Make your own creamy cashew milk by blending cashews in a blender, no straining required!
Pumpkin Spiced Latte in Moscow Mule Copper Mug

It’s hard to not get caught up in all the pumpkin spiced hype. Coffee shops have been on the band-wagon even before the leaves started to turn. I used to love enjoying a Pumpkin Spiced Latte at a coffee shop, but I now know that they are so loaded with sugar and so not worth the post-latte crash. This healthier alternative to the sugar-loaded versions will have you surprisingly pleased, and all from the comfort of your cozy couch. I’m sure that this Simple Pumpkin Spiced Latte Recipe will turn out to be a regular in your autumn morning routine, just like it has in mine.

Hand Holding Nori Rolls with Turmeric Carrot and Nuts

This post was originally posted on International Raw Food Day – July 11th (in 2013!!)! At the time it seemed raw food cafes and restaurants were popping up everywhere, and the food was delicious. Raw foodies claim that a raw food diet can increase energy levels with the promise of long-lasting health. As a Dietitian, I wanted to dig into this a little deeper. Regardless of the findings, one of my favourite eateries is Bliss Cafe in Victoria and this Raw Nori Recipe is straight from their non-cook book!

Lebanese Wild Fennel Pesto Recipe

By 3 Comments

This Lebanese Wild Fennel Pesto recipe is not your typical pesto. The addition of dates and hazelnuts makes a delicious spread that pairs amazingly with goat cheese and seedy crackers.

Wild Fennel Pesto in White Bowl with White Linen

Eat your weeds with this simple wild fennel pesto recipe! So many of our invasive weeds are edible including the beloved Blackberry Bush and the familiar Dandelion weed (see Wild Edibles – Dandelions, How To Harvest and Women’s Health). Wild Fennel is a common weed originating from the Mediterranean, and while it resembles dill, it offers a distinct anise, or licorice, aroma and flavour. This Lebanese Wild Fennel Pesto Recipe uses freely available weeds, combined with local Vancouver Island hazelnuts for a truly local dish.

Hemp Vegan Pate on White Plate with Seed Crackers
Hemp hearts are a food that comes up daily in my practice. I recommend it to many of my clients as a great plant-based complete protein that offers a wide nutrient profile including omega-3 fatty acids, healthy omega-6 fatty acids, magnesium and zinc. Generally, my focus is on breakfast as hemp is an easy way to bump up the protein at these carb-heavy meals. I am sharing this Hemp and Sunflower Seed Vegan Pâté so hemp doesn’t get confined to only breakfast. Serve it with some seed crackers or cut up cucumber for a tasty afternoon treat or as a light lunch.
