This Lebanese Wild Fennel Pesto recipe is not your typical pesto. The addition of dates and hazelnuts makes a delicious spread that pairs amazingly with goat cheese and seedy crackers.

Eat your weeds with this simple wild fennel pesto recipe! So many of our invasive weeds are edible including the beloved Blackberry Bush and the familiar Dandelion weed (see Wild Edibles – Dandelions, How To Harvest and Women’s Health). Wild Fennel is a common weed originating from the Mediterranean, and while it resembles dill, it offers a distinct anise, or licorice, aroma and flavour. This Lebanese Wild Fennel Pesto Recipe uses freely available weeds, combined with local Vancouver Island hazelnuts for a truly local dish.

Why I am so passionate about this common weed is that it is one of the first greens to make an appearance after the cold winter, and it is freely available to anyone who wants to make use of this wild foraged medicine. The roots are also highly regarded in herbal medicine and can easily be transformed into a nourishing alternative to your morning coffee.

I’ve been finding elderflowers at our local farmers market, the flower of the elderberry which are the dark purple late summer berries that are used in pies, jams or medicinally. For now, we have access to the beautiful white elderflowers, which are also edible, and offer a more gentle medicinal quality. To keep up with the seasons I wanted to celebrate this beautiful flower with this Elderflower Cordial Popsicles with Lemon and Mint.

Chaga Benefits & Chaga Turmeric Golden Milk Latte

Chaga mushrooms have recently been making regular appearances in healthy food stores and wellness websites but they have actually been used medicinally for centuries. I’ve compiled the latest research on chaga mushrooms and included my favourite way to consume them – in a delicious chaga turmeric golden milk latte.

We are blessed here in Canada to have wild Chaga mushrooms growing on our own birch trees, offering us wild medicine chaga benefits from mother nature herself. Chaga tea offers a slight vanilla flavour which tastes great on its own, and also makes a great base for a chaga turmeric golden milk latte. The combination of the immunoprotective chaga benefits and the anti-inflammatory aspects of turmeric make this an essential cold-weather drink to help nourish and nurture the body.

Edible Flower Salad with Rose Petals, Chive Flowers and a Light Vinaigrette

This recipe for edible flower salad features rose petals and chive petals, but really there are so many edible summer flowers that can be used. I love serving my flower salads with a light vinaigrette to as to not mask the delicate flavours of the flowers.

Floriphagia is the consumption of flowers as food. There are so many edible flours out there, and while the documented nutrition information is limited to ‘high source of vitamin C’ and ‘good source of antioxidants’, some may say that the benefits come from the energetics of eating flowers. I am sharing one of my favourite ways to eat flowers – a simple salad. A light vinaigrette helps to bring the salad together, without taking away from the delicateness of the flowers.
