Towards the end of spring a crazy, extroverted, bundle of energy entered our lives. He came with the intention of not hanging around the city for long, but ended up coming back again and again and again. After spending a few short weeks biking down the West Coast of America, surviving off porridge, wild berries, and other peoples generosity, he came back to Victoria with crazy tales and a thirst for life. He loved this city and the city loved him.

He loved food almost as much as I love it. He especially appreciated whole foods, wild foods and also foods that kept your tummy full. I thought he would appreciate this recipe for its wild berries, hand-picked apples, filling oats and protein packed hemp seeds. Dehydrating the fruit allows for the summers bounty to be enjoyed through the colder months, and if you haven’t yet tried dehydrated blueberries – they will change your life.

Recipe for Overnight Oats with Dehydrated Summer Fruits and Hemp Seeds

Ingredients for Overnight Oats with Dehydrated Summer Fruits and Hemp Seeds
1/2 cup blueberries
1 apple, cored and diced into 5cm pieces
1 banana, sliced (optional)*
1/2 cup whole rolled oats
2/3 cup organic, plain yogurt
1/2 tbsp. honey
2 tbsp. hemp seeds
1/4 cup organic milk or milk alternative
*consider food miles, choose fair-trade.
Method for Overnight Oats with Dehydrated Summer Fruits and Hemp Seeds
The night before prepare the fruit. Dehydrate the fruit in a dehydrator at 135 degrees Fahrenheit. The blueberries will need about 12 hours, the apple and banana about 10 hours. You will know they are finished when all the moisture has been removed from the fruit.
Also, the night before, prepare the oats. Add the rolled oats, plain yogurt, honey and hemp seeds in a bowl and mix to combine. You can also choose to add the milk now if you will be short on time in the morning. I like to add mine in the morning so the dish is a bit more moist.
The next morning add the dehydrated fruit to your rolled oats mixture. Add milk if it already hasn’t been added. Divide into 2 bowls. Enjoy!
